These recipes, which range from freshly made pasta to filling main courses, can help you create memories that you will cherish for years to come! Vegan Meatball One-Pot Pasta

Wanna make sure everyone is happy while also keeping your to-do list short? This one-pot wonder is perfect for the busy holiday cook, while providing a healthy, plant-based pair to the usual hearty mains.

Steps to Make:

Mix cauliflower, kangkong, tofu, garlic, AJI-NO-MOTO® Umami Seasoning, salt, and flour in a bowl. Scoop a tablespoon of the mixture and mold it into balls. Pan-fry the vegan meatballs in hot oil until golden brown, then drain and set aside.

In the same pot, sauté garlic and onion in additional oil until fragrant. Add tomatoes and tomato paste, then cook until soft. Pour in water and bring to a boil. Add the spaghetti and cook until al dente.

Once the pasta is cooked, season with AJI-NO-MOTO® Umami Seasoning, salt, black pepper, and brown sugar. Add the fried vegan meatballs and mix well. Transfer to a serving plate, garnish with parsley and Parmesan if desired, and serve!

Malunggay Pesto Pasta


This bright and healthy dish will bring a pop of greens to your table – something to cut through all those heavy dishes!

Steps to Make:

Blend malunggay leaves, basil, garlic, peanuts, Parmesan, olive oil, AJI-NO-MOTO® Umami Seasoning, and pepper until smooth.

Toss the cooked pasta with the malunggay pesto until well coated.

Transfer to a serving plate, serve, and enjoy!

Lemongrass Chicken with Garlic Tamarind Sauce


This warm and aromatic main course combines the fresh scent of lemongrass with tender chicken; a perfect centerpiece around to build your meal, made with ingredients with good amounts of Vitamin B6 and protein!

Steps to Make:

Combine lemongrass, garlic, AJI-NO-MOTO® Umami Seasoning, calamansi, black pepper, coco sugar, and chicken in a bowl. Mix well and let it marinate in the fridge for at least 15 minutes.

In a saucepan, combine tamarind, garlic, coconut milk, water, AJI-NO-MOTO® Umami Seasoning, and coco sugar. Simmer for about 15 minutes until the sauce thickens, then set aside.

Heat oil in a griddle pan and grill the marinated chicken for 5 minutes on each side or until cooked through.

Serve the grilled chicken with the sauce on the side.

Chicken Cajun Pasta


A spicy surprise to heat up the cooler season, this balanced and bold pasta dish is the perfect way to spice up your holiday menu. It’s a guaranteed hit for any guests who love a little kick.

Steps to Make:

With AI and $1 million in grant funding year per organization, the Wadhwani Foundation improves the school-to-work path in PH

At the Wadhwani Foundation Welcome Reception held at Yuchengco Museum, Makati City, President & CEO Dr. Ajay Kela shared that their free AI-powered platform equips Filipino learners with in-demand job skills and trains educators in AI-driven career counseling.
 

To close important gaps between education and work in the Philippines, the Wadhwani Foundation, a private philanthropic organization, provides Wadhwani GenieAI, a 24/7 mobile-first AI-powered skilling platform with several AI Co-Pilots. The platform offers free teacher training and career counseling resources. Additionally, the Foundation provides organizations with grants of up to $1 million each year to encourage worker upskilling and sustainable job creation.

Just 10% of K–12 graduates start their careers right away, according to a recent Foundation survey. Only 25% of these university enrollees graduate from higher education institutions, despite the fact that 83% pursue university education. The report also revealed that 75% of those who dropout of college without earning their degrees eventually find employment. In the meantime, 1.5% of the graduates start their own business, and 5.5% are classified as “Not in Education, Employment, or Training.” These factors lead to poor pay and unstable employment.

“Our free AI-powered platform provides access to in-demand job skills that address the gaps in the school-to-work journey of K-12 students in the Philippines,” said Dr. Ajay Kela, President & CEO of Wadhwani Foundation. “We are excited to collaborate in the Philippines to leverage AI-driven solutions that empower students, improve public services, and generate jobs.”

The Foundation currently collaborates with over 60 partners across the Philippines, reaching 22,000 students through AI Co-Pilots. It helps students build in-demand job skills and make informed career choices, while also providing training for educators to deliver AI-driven career counseling.

Boosting Job Creation in PH

To boost job creation in the Philippines, the Wadhwani Foundation, through its grant-making arm, Wadhwani Charitable Foundation (WCF), also offers grants up to $1 million annually to high-impact organizations.

“We are looking for non-profit organizations, enterprises, and academic institutions that share our vision to boost job creation for the 21st-century workforce,” said Angela Chen-Delantar, Vice President for Skilling of Wadhwani Foundation. “Our funding will help them expand impact, enabling us to reach 1 million lives by 2030 and providing more Filipinos with job opportunities for a better future.”


WCF seeks organizations in the country focused on job fulfillment or creation, with a proven track record of scaling impact. Ideal partners operate within a $1-5 million budget, demonstrating strong leadership in their sector.

Aside from the annual funding, WCF provides comprehensive support to partner organizations including access to the GenieAI platform for job creation, skilling, and placement, and opportunities to collaborate with the Foundation’s global network, leveraging expertise in program management and impact measurement.

Other developing nations with sizable and expanding young populations, such Mexico, Brazil, and Indonesia, also provide the funding program.

Dr. Romesh Wadhwani, a Silicon Valley entrepreneur, established the non-profit tech organization The Wadhwani Foundation in 2001 with the goal of enhancing lives and creating jobs in Asia, Africa, and Latin America.

The Itchyworms are making a second trip to Japan as part of their “Akin Ka Na Lang” tour

The Itchyworms, an award-winning Filipino band, will be returning to Japan for another performance of its highly regarded Akin Ka Na Lang… Japan! Early 2025 tour.

The band will play three gigs from January 17–19, 2025, at renowned locations throughout Tokyo, such as Mr. Back in Saitama, Heaven’s Door in Sangenjaya, and Gamuso in Asagaya, following the success of their 2023 tour.

“We’ve been fortunate to build a loyal fanbase in Japan over the years,” says Jugs Jugueta, lead vocalist of The Itchyworms. “It’s truly humbling to see fans traveling hours from all over Japan just to watch us perform. What makes the Japanese audience so special is their deep appreciation not only for our hits but also for the more obscure tracks. To them, it’s all good music.”

The Itchyworms, known for their blend of rock, pop, and humor, have long cultivated an international following. For this upcoming tour, the band promises a fresh setlist that includes more English-language songs from their early catalog, along with some unexpected surprises. “We used to have a lot of songs in English when we were starting out, and we also experimented with odd time signatures. We’re bringing some of those songs back for this tour, and I’m excited to see how the Japanese audience responds to this experiment,” says Jugueta.

Drummer and co-lead vocalist Jazz Nicolas also shares his admiration for the Japanese fans, noting that despite language barriers, music remains a universal connector. “Even if the audience doesn’t understand every word, the connection is still there,” he says. “It’s the music that binds us.”

Nicolas also reflects on a memorable moment from a previous Japan tour. “One time, I decided to surprise my bandmates by crawling on the floor and making weird noises behind a wall, just to startle them. To my surprise, it wasn’t my bandmates who walked in—it was the venue owner. He just smiled and said, ‘Aha! Crawling on the ground. Itchyworms.’ That moment has stayed with me ever since.”

The Itchyworms plan to further broaden their audience next year by performing at additional locations overseas. In addition to their upcoming gigs in Japan, the band is organizing additional events in Australia, additional Zealand, and Canada as well as European tours, with a particular emphasis on the UK.

The Itchyworms have been a popular musical export from the Philippines for more than 20 years, and their popularity continues to grow among admirers worldwide.

To improve PH’s worldwide connectivity, Eastern Communications collaborates with AMS-IX, HGC Global Communications, and STT GDC Philippines

The Jollibee Group Foundation Enhances Farmers’ Agri-Technological Proficiency

Over 18 participants from different FEP farmer groups and local implementing partners gathered to learn about agri-extension approaches and methods at the pioneering Agri-Tech Facilitator Training Program of the Jollibee Group Foundation.
 

The inaugural round of training for the Agri-Tech Facilitator (ATF) Program was successfully held in Pasig City from October 14–16 by the Jollibee Group Foundation (JGF), the social development division of the Jollibee Group. As part of JGF’s effort to develop smallholder farmers into agri-tech facilitators who will find, test, and promote innovations that will increase the productivity, profitability, and sustainability of their agro-enterprises, this training covered the first of three program modules.

JGF offers farmer groups and local implementing partners of its Farmer Entrepreneurship Program (FEP) ongoing capacity-building training, which includes the ATF Program. Ayat ti Pasuquin Farmers and Irrigators Association, Kalasag Multipurpose Cooperative, Lamac Multi-Purpose Cooperative, Lourdes Multi-Purpose Cooperative, Marcos Village Palayan City Farmers Agri-Farm Corporation, Onion and Vegetables Producers Cooperative, Pagbiagan Multipurpose Cooperative, Sacred Heart Savings Cooperative, Tucop Farmers Association, Ungab Farmers Association, and Ahon sa Hirap, Inc. (ASHI) were among the first group of ATF participants.

“The Agri-Tech Facilitator Program enables JGF to further support the growth of our farmers. By fostering collaboration and encouraging openness to innovative changes, we hope our farmers could thrive better as agro-entrepreneurs and continue to achieve sustainability and success in the long-term,” JGF President Gisela Tiongson said.

The ATF participants engaged in activities and workshops to build on their outputs and allow them to have a meaningful learning experience.
 

For Jude Tria, Board of Director of the Lourdes Multi-Purpose Cooperative, one of FEP’s local implementing partners, who is also an ATF Farmer Adviser, the entire module would also be beneficial in building their confidence and establishing their quality as FEP farmers.

Naniniwala ako na ang programa ng ATF ay magkakaroon ng magandang epekto sa mga magsasaka dahil ang agritech ay hindi lamang pamilyar sa mga magsasaka kundi nakatutok din sa bawat isa sa kanila. Dahil napaka-accessible rin nila, hindi na magdadalawang isip ang mga magsasaka tungkol sa pagkonsulta sa kanila, at sa akin, ito ay magreresulta sa na ang programa ay maging isang milestone, isa pang trademark ng FEP, (I believe that the ATF program would have a good impact on the farmers because the agritech is not only familiar with the farmers but is also focused on each one of them. Since they are also very accessible, the farmers won’t have second thoughts about consulting them, and to me, this would eventually result in the program becoming a milestone, another trademark of FEP)” he said.

JGF, through FEP, provides smallholder farmers with training and resources to help sharpen their leadership and technical skills, enabling them to supply quality vegetables to institutional markets such as Jollibee Group. To date, 19 FEP farmer groups regularly deliver their crops to the Company.

Farming Innovations

Following the completion of the first module, the participants will proceed to the next two modules which will be conducted in 2025. Part of the two other modules is the practicum participation of the attendees.

The next training session will be in January 2025 and will be facilitated by the Xavier University – Ateneo de Cagayan.

For Lamac Multipurpose Cooperative Association Cluster Leader Jefrey Velasquez, the ATF program helps enhance their competency as farmers. As a leader, he also learned how to communicate effectively, which, according to him, is essential in building relationships with his fellow farmers.

“Mahalaga po itong training na ito dahil dito po nagmumula ang mga bagong kaalaman sa teknolohiya, at iba pa pong kasanayan, na siya ko rin pong ituturo sa aking mga kapwa magsasaka.” (This training is important because it gives us new knowledge on technology, as well as other practices, which I will also be able to teach and share with my fellow farmers) he said.

Meanwhile, Larena Nicolas, President of the Marcos Village Palayan City Farmers Agri-Farm Corporation, appreciates how the training encourages leaders like her to help their fellow farmers succeed.

“Kailangan ko pong maituro sa aming members ang kahalagahan ng ganitong trainings upang ma-adopt din po nila ‘yong practices at patuloy na makapag supply sa mga institutional market. Importante po talaga na magpaliwanag sa mga farmer at pakinggan ang needs nila,” (I need to teach our members the importance of such trainings so they can also adopt the practices and be able to continuously supply to institutional markets. It is important that we get to discuss with them and listen to their needs) she added.

JGF is eager to see how the new Agri-Tech Facilitators will apply these agri-extension strategies and techniques in their local farming communities, thereby improving the standard of living for the nation’s smallholder farmers.

La Mesa Ecopark receives #GreenLove as Taiwan Excellence partners with Manila Water Foundation

Taiwan Excellence is showing #GreenLove by partnering with Manila Water Foundation (MWF) to boost the promotion of La Mesa Ecopark (LME), the ‘last ecological frontier’ of Metro Manila.

As part of its efforts on environmental sustainability, Taiwan Excellence will engage in information, education, and communication support to Manila Water Foundation for the promotion of the 33 -hectare LME Park in Greater Lagro, Quezon City, which combines conservation and tourism.

Taiwan Excellence noted that LME is part of the La Mesa Watershed which is an important water source for Metro Manila and the Greater Manila Area.

“The vital aspect of our #GreenLove campaign is our sincere love for the environment by preserving and protecting our natural resources. This is our action in support of a healthier environment. We are giving future generations a greener and healthier Earth,” says Dir. Alex Lai of Taiwan Trade Center, Manila.

Dir. Lai also said that their #GreenLove campaign with MWF underscores their appreciation for LME’s rich biodiversity.

The LME is where flora, fauna, and communities interact in ecological harmony.

“La Mesa Ecopark is considered one of the last lungs of Metro Manila because of its lush green forest that helps produce oxygen and aid in improving the city’s air quality, as well as preserve our water source. Recently they held the “Go Green with Taiwan” project resulting in 17 semifinalists from 12 countries, including the Philippines. This global project encourages individuals, social institutions, and non-profit governmental organizations to submit ideas for a better world using Taiwanese green products and solutions.

The top three winners will be awarded a total of USD 20,000, with the results being announced on December 11, 2024.
